Under Construction

If you're looking at my blog and are noticing that something is different.. its because it is! I have been playing around with new backgrounds and fonts and ended up getting myself lost and don't know how to get back! So, my page is currently "under construction" while I try to find some time to edit it and make it more Armstrong like :) Every time I try to change the background color or fonts, a baby cries or a toddler needs me, and I come back and don't remember what I did! So check back soon and hopefully there will be an update!

One Week Left...

I have one week left until I have to go back to work. The past 3 months have been AMAZING. I really feel that I can be a stay t home mom and be a great one at that. I have already started printing out preschool lessons so that when I do get to stay at home, I can do a lesson a day for both kids. On top of that I have been following my cleaning schedule and the house looks great! My sink is never full of dirty dishes, the floors seem to have less hair, the beds are always made... it just looks nicer!
In honor of my last week on maternity leave, Ive decided to try baking. This morning Evangeline and I baked chocolate chip banana muffins... they were SO yummy! The recipe and pictures are below :) I'm also going to make weight watchers bread and homemade soft pretzels!
INGREDIENTS :
1 3/4 cups all-purpose flour
3/4 cup sugar 1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup vegetable oil
1/2 cup plain yogurt (I used 1/2+1tbs of milk)
1 teaspoon vanilla extract 1
1 cup mashed ripe bananas (i used 2 whole bananas- i think 2 1/2 would have been better)
3/4 cup semisweet chocolate chips

DIRECTIONS:
In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, oil, yogurt (or milk)and vanilla. Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
Evangelines breakfast, strawberry yogurt, grapes, and a muffin (she ended up eating THREE!)
